What Are Microgreens?
Microgreens are the seedlings of vegetables and herbs. Once the seed of an herb or vegetable begins to grow, it is considered a sprout. Once the sprout begins to grow, the baby plant is considered a microgreen.
Sprouts and microgreens are not the same. Sprouts are usually grown in water and harvested within 2-3 days while microgreens are grown in soil, require sunlight, and are harvested after 1-3 weeks of growing time, when they are about 2 inches tall.
Microgreens contain a higher concentration of many nutrients such as phytonutrients, antioxidants, vitamins, and minerals. They are four to forty percent more nutrient-rich than their mature counterparts.
Why Should I Grow Them?
They best way to consume microgreens is when they are fresh. That means, very soon after they are harvested. You can't get fresher then growing and harvesting them right in your home. We have the perfect climate in Singapore for growing microgreens so go on, join the urban farming revolution! Besides, we have never seen fresh microgreens sold in any of our supermarkets.
Do They Require Care Because I Really Don't Have The Time
They require as much care as your morning coffee, when you patiently wait for your cup to be brewed. Once they have germinated, microgreens need to be placed in a well lit environment (next to a window, balcony etc) and kept moist. That means watering it once (while your morning coffee is being brewed) or twice a day.
Why Can't I Use Regular Seeds And Harvest Them Very Young?
The simple answer is, you could. BUT, microgreen specific seeds are developed that way for a reason. They do better at becoming consistent microgreens - they germinate faster and grow uniformly.
Ok, I'll Grow Them. But What Do I Do With Them?
Another good question! We're starting to compile a list of simple recipes (see tab Recipes) to get your started with the help of friends. The best way to benefit from microgreens is to eat them fresh and raw. So, start by using them to garnish your dish, toss them into your salads, or include them in your sandwiches.
